This course allows students to translate theory into practice. The planning, operation, management and evaluation of food service systems in a range of settings is a core practice area for dietetic professionals. This course will critically examine the processes involved in the efficient and safe provision of culturally appropriate food and nutrition services to a range of target populations and client groups. Students will gain skills in food safety, food service systems and management, menu planning, and nutrition standards and policies. A work integrated service-learning model is used for this course with a series of workshops which provide foundation knowledge from which students translate into practice in their placement.

All students are required to undertake a 20 day placement in food service management andᅠare expected to demonstrate initiative,ᅠproblem solving skills and integration of theory into professional practice.

Aims and outcomes

Students will learn about how to influence the food supply to improve the nutritional status of individuals and vulnerable populations The National Dietetians Australia competency standards covered in this course include:

1.1 Demonstrates safe practice 

1.4.1 Applies organisational, business and management skills in the practice of nutrition and dietetics (effective time, workload and resource management)

Task description

Students will be required to complete four online quizzes during the semester. Each quiz will consist of 10 multiple choice questions randomly selected from a pool of questions for each module. The quizzes can be completed at any time before the due date, however, once the quiz commences, students will have a maximum of 20 minutes to complete the quiz. Only one attempt at each quiz is allowed.

The maximum extension allowed is 28 days. Extensions are given in multiples of 24 hours.

Where an online quiz that is available to students for a period of more than 24 hours, and you are unable to complete the quiz during the period the quiz is available, you may apply for an extension of the online quiz. All supporting documentation or information for an extension to the online quiz should cover the entire period the quiz is open.

Late submission

A penalty of 10% of the maximum possible mark will be deducted per 24 hours from time submission is due for up to 7 days. After 7 days, you will receive a mark of 0.

Task description

Students (in their placement pairs/groups) will produce a 3-page executive summary, a report to be provided to the professional practice site and deliver a presentation in Workshop 7 of their professional practice project findings. See Blackboard for details.

To be submitted via the relevant Turnitin submission portal on the course Blackboard site. All students must submit a copy of the Executive Summary, Report and Presentation (a copy of slides).

Deferral or extension

You may be able to apply for an extension.

The maximum extension allowed is 28 days. Extensions are given in multiples of 24 hours.

Extensions for group work assessment may be available and will require a single request submitted with agreement from at least 50% of the members of the group, and recognition of potential impacts on the other group members. Download and complete the form below, and attach this form to your extension request: Extension of Group Assessment - Group Member Acknowledgement (PDF, 144.9 KB) 

Student Access Plans for an individual student do not guarantee an extension for the assessment item. Extension Verification Letters cannot be used for group-based assessments and activities.  

Dysfunctional group dynamics, poor performance by individual group members, or illness or other issues of a group member are generally not considered sufficient grounds for an extension on submission of a group assessment item. These issues should be actively managed by the group and the Course Coordinator as appropriate, during semester.

Task description

Placement Preparation and Progress includes two components:

1) Placement Plan and Feedback Action (Learning plan)- Students must complete this plan in preparation for placement. Due end of week 1.

See Blackboard for details. 

2) Competency Assessment- Professional practice project supervisors will provide feedback on student progress at the end of week 2 (interim assessment) and week 5 (final assessment) based on the DA National Competency Standards. 

Hurdle requirements

This assessment task is a course hurdle. Students must pass this assessment item, to achieve a final grade of 4 or higher.

You will receive a mark of 0 if this assessment is submitted late.

As this task is Pass / Fail, students who submit beyond the specified due date/time without an approved extension, will fail this task and subsequently the course.

Course grade description: Fails to satisfy most or all of the basic requirements of the course. A grade of 1 will be awarded to a student who achieves a final cumulative percentage ofᅠ0% - 24% from all graded assessment tasks.

2 (Fail) 25 - 44

Minimal evidence of achievement of course learning outcomes.

Course grade description: Fails to satisfy some of the basic requirements of the course. Clear deficiencies in performance, but evidence that some basic requirements have been met. A grade of 2 will be awarded to a student who achieves a final cumulative percentage ofᅠ25% - 44%ᅠfrom all graded assessment tasks.

3 (Marginal Fail) 45 - 49

Demonstrated evidence of developing achievement of course learning outcomes

Course grade description: Fails to satisfy all basic requirement for pass but is close to satisfactory overall and has compensating strengths in some aspects. A grade of 3 will be awarded to a student who either (a) achieves a final cumulative percentage of 45% - 49% from all graded assessment tasks, or (b) achieves a final cumulative percentage of 50% or higher from all graded assessment tasks but does not pass the "must pass" assessment task.

4 (Pass) 50 - 64

Demonstrated evidence of functional achievement of course learning outcomes.

Course grade description: Satisfies all of the basic learning requirements for the course, such as knowledge of fundamental concepts and performance of basic skills; demonstrates sufficient quality of performance to be considered satisfactory or adequate or competent or capable in the course. A grade of 4 will be awarded to a student who achieves a final cumulative percentage of50 - 64% from all graded assessment tasks and passes the "must pass" assessment task.

5 (Credit) 65 - 74

Demonstrated evidence of proficient achievement of course learning outcomes.

Course grade description: Demonstrates ability to use and apply fundamental concepts and skills of the course, going beyond mere replication of content knowledge or skill to show understanding of key ideas, awareness of their relevance, some use of analytical skills, and some originality or insight. A grade of 5 will be awarded to a student who achieves a final cumulative percentage ofᅠ65% - 74% from all graded assessment tasks and passes the "must pass" assessment task.

6 (Distinction) 75 - 84

Demonstrated evidence of advanced achievement of course learning outcomes.

Course grade description: Demonstrates awareness and understanding of deeper and subtler aspects of the course, such as ability to identify and debate critical issues or problems, ability to solve non-routine problems, ability to adapt and apply ideas to new situations, and ability to invent and evaluate new ideas. A grade of 5 will be awarded to a student who achieves a final cumulative percentage ofᅠ65% - 74% from all graded assessment tasks and passes the "must pass" assessment task.

7 (High Distinction) 84 - 100

Demonstrated evidence of exceptional achievement of course learning outcomes.

Course grade description: Demonstrates imagination, originality or flair, based on proficiency in all the learning objectives for the course; work is interesting, surprising, exciting, challenging or erudite. A grade of 7 will be awarded to a student who achieves a final cumulative percentage of 85% - 100% from all graded assessment tasks and passes the "must pass" assessment task.

Additional course grading information

This course contains ‘must pass’ assessment items, specifically the Learning Plan and Competency Assessment. Students must pass this assessment item to pass the course overall, i.e. even if your final percentage mark is 50% or higher, if the individual ‘must pass’ assessment item is not passed, a student cannot achieve a grade higher than a 3.

A final percentage mark will be rounded to the nearest whole number (e.g. 64.50 and above will be rounded to 65 and 64.49 and below will be rounded down to 64.)

Use of generative Artificial Intelligence (AI) or Machine Translation (MT)

The assessment tasks in this course evaluate students' abilities, skills and knowledge without the aid of generative Artificial Intelligence (AI) or Machine Translation (MT). Students are advised that the use of AI or MT technologies to develop responses is strictly prohibited and may constitute student misconduct under the Student Code of Conduct.

Attendance at placement

Students are required to make up any missed placement days to meet the course requirement of 25 placement days, which contribute to the 100 days of professional practice set by Dietitians Australia.

Only two conditions will be accepted for a student failing to attend placement:

  1. Medical
  2. Extenuating circumstances - legitimate and non-medical events (e.g., bereavement, private matters, elite sporting commitments).

Please review the information listed on the medical or extenuating circumstances page for information about acceptable supporting documentation.

If you cannot attend a placement day, you must email your site supervisor, to inform them of any absences as soon as possible and CC the course coordinator. You will need to provide evidence to support your absence for verification purposes. The course coordinator will then liaise with the site to arrange additional placement days as required. 

Student are also required to complete an absentee form and email the form via email to the Course Coordinator no later than two (2) calendar days after the missed placement day/s was held.

Attendance at workshops

Attendance at all workshops is strongly encouraged as material covered in the workshops will assist in successfully completing all aspects of this course. Workshops are intended to be interactive and workshops will not be recorded. Workshop slides will be available on Blackboard.

Students who miss a workshop must complete an absentee form and email the form as soon as possible to your course coordinator no later than two (2) calendar days after the date of the original class was held. You must submit supporting documentation along with your request. Please review the information listed on the medical or extenuating circumstances page for information about acceptable supporting documentation.

Any non-approved absences may result in being placed under the Fitness to Study policy.

What is Turnitin

Turnitin is an electronic assignment submission tool. The tool provides your Course Coordinator with:
